Salmon Salad Recipe

*Salmon Salad

4-6 cups - uncooked gluten-free macaroni
2 tins - salmon
1/2 - cucumber, cut small
3 - boiled eggs, peeled and chopped (optional)
Dressing:
3/4 cup - mayonnaise
1 tsp - honey
1 Tbsp - lemon juice
1 tsp - basil
1 tsp - thyme

Cook macaroni and cool. Mash salmon with a fork. Combine the salmon, eggs, and cucumber with the pasta. Stir dressing together in cup, pour over pasta, and stir to coat. Add more mayonnaise and lemon juice if needed. On a hot day, we frequently serve this and a large fruit salad as our meal- simple and satisfying.
