Recipe - Broccoli Cheese Soup

1/2 cup - chopped onion 2 cups - chicken broth 4 oz - fine noodles 1/8 tsp - garlic powder 3 tbsp - butter 8 oz - velveeta 8 oz - fresh or frozen broccoli 3 cups - milk
Brown butter, add onion and chicken broth. Heat to boiling, add the noodles and cook 4 minutes. Add broccoli and garlic powder. Cook another 4 minutes. Add cheese and stir until melted. Then add milk and heat; do not boil.

6 cups - water 2 boxes - frozen chopped broccoli 6 cups - milk 1 tbsp - salt 3 tbsp - chicken base 3 tbsp - margarine 1 pkg - noodles (8-12 oz) little onion if desired 1 lb - velveeta cheese (cubed)
Bring water, milk and salt to boil. Add chicken base, onion, noodles and broccoli. Cook till soft over medium heat. Add cubed cheese and margarine. Turn down to warm. Serves 15-18.

1 cup - chopped onion 3 tbsp - butter 2 cups - chicken broth 2 cups - water 2 - chicken bouillon cubes 4 oz - fine noodles 1/2 tsp - salt 1 - bunch broccoli, chopped 1/4 tsp - garlic powder 3 cups - milk 1 can - cream of chicken soup 1 cup - velveeta cheese, cubed 1 cup - cooked chicken pieces, optional 1 can - mushrooms, optional pepper, to taste
Saute onion in butter. Add broth, water and bouillon. Heat to boiling. Then add noodles and salt. Cook noodles until almost tender, then add broccoli and garlic powder. Cook four minutes. Add milk, velveeta cheese and chicken soup. May also add chicken pieces and mushrooms if you like. Add pepper to taste. Stir until cheese is melted. May want to thicken with flour.

Recipe - Broccoli Noodle Soup

2 tbsp - oil or butter 3 cups - chopped broccoli 3/4 cup - onion, chopped 6 cup - milk 6 cup - chicken broth 1 lb - velveeta cheese, cubed 8 oz - fine noodles pepper to taste 1/8 tsp - salt cornstarch
In large saucepan, heat oil. Add onion and saute over medium heat for 3 minutes. Add chicken broth and heat to boiling. Gradually add noodles and salt so that broth continues to boil. Cook, uncovered for 3 minutes, stirring occasionally. Stir in broccoli and cook 4 minutes more. Add milk, cheese and pepper and continue cooking until cheese melts, stirring constantly. If soup is thin, mix cornstarch with a little water and add to soup.

Recipe - Cheese Burger Soup

1/2 lb - ground beef 3/4 cup - shredded carrot 1 tsp - dried basil 4 tbsp - butter 4 cups - shredded potatoes 8 oz - cheddar cheese 3/4 tsp - salt 1/4 cup - sour cream 1/4 cup - flour 1 1/2 cups - milk 1/2 tsp - pepper 3/4 cup - onions (chopped) 3/4 cup - celery (diced) 1 tsp - parsley flakes 3 cups - chicken broth
Brown beef, drain and set aside. Saute onion, carrots, celery, basil and parsley in 1 tbsp butter until tender. Add broth, beef and potatoes. Cover and simmer until potatoes are tender. Meanwhile melt remaining butter. Add flour and cook untill bubbly. about 3-5 minutes. Add to soup and bring to a boil. Cook and stir for 2 minutes. Reduce heat. Add cheese, milk, salt, and pepper. Cook and stir until cheese melts. Remove from heat and blend in sour cream. Yields: 8 servings about 2 1/4 quarts.

Boil chicken cubes, water, celery, carrots, potatoes and onions for 20 minutes. Add frozen vegetables. Cook until tender. Add soup, water and cheese. Stir over low heat until cheese is melted.

In a 3 qt saucepan, brown meat and onion. Drain; set aside. In same pan, saute carrots, celery and parsley in 1 tbsp butter until tender. Add broth, potatoes and meat. Bring to a boil. Cover and simmer until potatoes are tender. Meanwhile in skillet, melt remaining butter; add flour. Cook and stir until bubbly. Add milk, salt, pepper and cheese. Add to soup. Remove from heat. Add sour cream. Delicious!

Melt butter in large saucepan. Add broth, vegetables, soup base, chicken and salt. Cook on low until vegetables are soft. Turn to medium, bring to boil. Mix together flour and milk. Add while soup is boiling. Then add velveeta until melted.

Mix together as a paste:
1 1/2 tbsp - chili powder 2 tbsp - water 1 tsp - flour
1 tsp - sugar 2 cans - kidney beans, undrained 1 - bay leaf
Brown ground beef, add ingredients except kidney beans. Cover and simmer for 1 hour. Add beans and simmer uncovered for another 30 minutes.

1 cup - potatoes, diced 1 qt - milk 1 cup - carrots, diced 1 1/2 tsp - chicken base 1/2 cup - onions, chopped 1/4 cup - butter 1/2 cup - celery, chopped 2 cups - ham, cut in pieces enough velveeta cheese to give a good taste
Put potatoes, carrots, onions, celery, butter and chicken base in saucepan with enough water to cover; cook until vegetables are tender. Add ham and milk, bring to a boil and thicken with 2 tbsp flour and water. Add cheese last. If you want thicker soup use more flour.

1 lb - bacon 1 cup - water 1 - onion, diced 10 oz can - cream style corn 2 cups - diced raw potatoes 1 qt - milk 1 tsp - salt 3 tbsp - butter 1/4 tsp - pepper

1 pt - oysters 1 qt - milk 1 can - condensed cream of celery soup 6 tbsp - butter paprika
Cook oysters in liquor and butter until the oysters curl at the edge. Do not boil. Add milk and soup to the oysters, stirring well. Bring almost to a boil. Add black pepper and salt to taste. Serve in bowl with paprika sprinkled on top.

Recipe - Split Pea Soup

16oz - split peas 3 qts - water 1 sm - ham shank 1 lg - onion 1 - bay leaf 2 tbsp - chicken soup base 1/2 tsp - garlic powder 1/2 tsp - oregano 1/4 - 1/2 tsp - pepper 1 1/2 cups - carrots, shredded 1 cup - diced celery
In a large pot combine peas, water, ham shank, onion, soup base and seasonings. Simmer for 1 1/2 hour. Remove ham shank from pot and debone meat, return meat to the soup. Stir in carrots and celery. Simmer 2 hours more or until soup reaches desired thickness. Makes 9 cups.

Recipe - Squash Soup

1/4 cup - butter or margarine 2 tbsp - vegetable oil 1 - large onion, peeled and minced 2 - garlic cloves, peeled and minced 3lb - yellow squash, thinly sliced (can use zucchini) 3 1/2-4 cups - chicken broth 1 cup - half and half or light cream 1 1/2 tsp - salt or to taste 1/2 tsp - pepper
Melt butter in kettle. Add oil and mix well. Add onion and garlic, saute till tender. Stir in squash and chicken broth. Cover and simmer 15-20 minutes or until squash is tender. Spoon about 1/3 of squash mixture into an electric blender or food processor; process until smooth. Repeat with remaining squash. Return to kettle. Stir in half and half, salt and pepper. Cook over low heat, stirring constantly until well heated. Serve hot or chilled.

Recipe - Stuffed Pepper Soup

1 pouch - long grain wild rice, ready to serve 1 lb - ground beef 2 cups - green pepper, chopped 1 cup - onion, chopped 2 1/2 cups - spaghetti sauce, homemade 1 cup - chunky salsa, mild 1 (14 oz) can - beef broth
Prepare rice according to pkg directions. Brown beef, green peppers and onions until meat is done, drain. Stir in sauce, salsa and broth. Simmer for 30 minutes.

Brown beef in skillet. Add rest of ingredients and bring to a boil simmer for 15-20 minutes. Serve over crushed Taco or nacho chips, sprinkle with shredded cheddar cheese, and top with sour cream.

1 lb - ground beef 1 pkg - taco seasoning mix (almost 1/2 cup in bulk) 15 oz - chili beans 1 small - onion, chopped 1 pt - corn 1 1/2 qt - tomato juice 1/3 cup - sugar
Brown ground beef and onion. Add tomato juice, corn, beans and taco seasoning. Bring to a boil, then simmer for 15-20 minutes. Serve over crushed corn chips. Sprinkle with grated cheddar cheese and top with sour cream.

1 lb - ground beef (browned) 1 lg - onion (chopped) 16 oz - mexican style tomatoes 16 oz - ranch style beans or refried beans 16 oz - whole kernel corn (undrained) 16 oz - kidney beans (undrained) 16 oz - black beans (drained) 16 oz - picante sauce Doritos, corn or tortilla chips (crushed) sour cream shredded cheddar cheese
Brown meat and onions in skillet, draines. Combine with all to the other vegetables, beans and picante sauce in slow cooker. Cover and cook on low for 4-6 hours. Add two cups of water towards the end if needed to thin the soup. Serve with chips, sour cream and cheddar cheese.

Saute chicken, onion and garlic powder in oil. Add beans, broth, chillies and seasonings. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes. Makes 2 1/4 qt.

Recipe - Yankee Chili

1 lb - lean beef (cut into cubes) 1 lb - fresh loose pork sausage meat 1 (40.5 oz) can - kidney beans 1 (14.5 oz) can - navy beans 24 oz - V8 juice 1 pt - diced skinless tomatoes 1 lg - onion (chopped) 2 tsp - garlic powder 2 tbsp - sugar 2 tbsp - chili powder 1/4 tsp - cayenne 1/4 tsp - black pepper
Heat some oil in a heavy pot or kettle. Stir and brown meat. Pour off (or cook off) any accumulated liquid add oil, onions and garlic and continue to brown meat. Add all the other ingredients. Simmer for 1 1/2 hours covered, stirring occasionally. Simmer uncovered about 1/2 hour, or as necessary to thicken. A fork should (almost) stand up in it. Optional - Top with cornmeal dumplings. -This is Yankee Chili because it had beans cooked in it. Real chili dosen`t have beans in it but can be eaten with beans as a side dish.
