Put pastry flour in a tupper fix-n-mix bowl to weigh 4 lbs including the bowl. Beat egg yolks from 3 dozen eggs (at least 2 cups) with 1 tbsp salt and 1 1/2 cups boiling water till foaming. Make sure water is boiling hot and then beat quickly. Pour into flour and stir with large fork. Shape into ball with hands. Put lid on and let stand 30 minutes. Then knead a bit then put through noodle maker spread out and let dry. This dough is easy to handle and not sticky.
