Recipe - Asparagus Casserole

1/4 cup - butter 1/4 cup - flour 1/2 tsp - salt 1/2 tsp - pepper 2 1/2 tsp - milk 1 1/2 cups - cooked asparagus 1 cup - cheese 3 - hard boiled eggs
Melt butter; remove from heat. Stir in flour, salt and pepper. Slowly stir in milk and bring to a boil until thickened. Mix all ingredients together and bake uncovered for 15 minutes. Yield 12 servings.

Recipe - Asparagus Rollups
|
|
|

24 - fresh asparagus spears 8 oz - cream cheese, softened 4 oz - blue cheese, crumbled 2 tbsp - mayonnaise 1 tbsp - fresh chives, chopped 12 - bread sliced, trimmed 12 - deli ham slices, thinly sliced 1/4 cup - butter or margarine, melted paprika
Snap off tough ends of asparagus. Microwave approximately 6 minutes until crisp tender. Remove. Cool on paper towels. Stir together cream cheese, blue cheese, mayonnaise and chives. Roll each bread slice with rolling pin to flatten. Spread 1 side of each slice with 2 tbsp cream cheese mixture. Top each with 1 ham slice. Place 2 asparagus spears, tips pointed toward opposite ends, on one end of each bread slice. Roll up and place seam side down, on a greased baking sheet. Brush with butter. Sprinkle with paprika. Bake until golden brown at 400° about 12 minutes.

Recipe - Asparagus Swiss Quiche
|

|

10 - bacon strips, diced onion 1lb - asparagus, trimmed 1/4 tsp - salt 1 (9") - unbaked pastry shell 1/2 cup - half and half cream 1 cup - swiss cheese 1 tbsp - flour 1/8 tsp - pepper 3 - eggs
In skillet cook bacon until crisp. Drain, reserving 1 tbsp drippings. Saute onion until browned. Drain. Cut asparagus in 1" pieces. Cook asparagus in small amount of water until crisp tender; drain. In a bowl toss bacon, onion, asparagus, cheese, flour, salt and pepper. Pour into pastry shell. Beat eggs and cream. Pour over bacon mixture. Bake at 400° for 30-35 minutes or until knife inserted near center comes out clean and crust is golden brown. Let stand 10 minutes before cutting.

Recipe - Au Gratin Potatoes

6 med - potatoes, peeled, cooked and sliced 1 1/4 cups - shredded cheddar cheese 1 1/2 tsp - salt 1/4 tsp - pepper
White Sauce: 4 tbsp - flour 4 tbsp - butter 2 cups - milk salt and pepper to taste
In saucepan melt butter. Add flour, salt and pepper, stir until smooth. Gradually add milk. Bring to a boil till thickened. Pour over sliced potatoes and cheese. Bake in a 2 qt baking dish at 350° for 30 minutes.

Recipe - Baked Asparagus Loaf
|

1 cup - whole wheat bread crumbs 1 cup - hot milk 2 - eggs, beaten 4 cups - asparagus 4 tbsp - olive oil 1 tsp - sea salt 1/4 cup - finely chopped onions tomato sauce
Cut asparagus into 1" pieces. Add seasoning, milk and bread crumbs, and fold in asparagus lightly. Pour into a well oiled casserole dish and bake in moderate oven for 1 hour at 350°. Serve with your favorite tomato sauce. This recipe is very tasty and quick to make. It can be served as an entree or as a complement to your meal.

Recipe - Baked Corn

2 - eggs, beaten 1 cup - sour cream 1/2 cup - brown sugar 1/2 cup - butter, melted 1 box - jiffy corn bread mix 1 qt - corn
Mix first five ingredients well and add corn. Bake at 350° for 40-45 minutes in a greased cake pan.

Beat eggs. Add rest of ingredients and pour into greased casserole. Sprinkle with pepper. Dot with butter. Bake at 250° till firm, approx. 1 hour.

Recipe - Baked Corn Flake Potatoes

potatoes salt pepper seasoned salt oleo or butter corn flakes, crushed
Peel and slice potatoes the size of french fries or a little larger. Melt butter and dip potato wedges in this, then roll into corn flake crumbs to which salt, pepper and seasoned salt has been added. Arrange on cookie sheet and bake 1 hour or until done.

Recipe - Baked German Potato Salad
|

5 lbs - red potatoes 1 cup - thinly sliced celery or 1/4 tsp celery seed 2 tbsp - flour 3/4 tsp - dry mustard 1/2 cup - water 2 - grated carrots 1/2 lb - bacon, plus drippings 1 cup - chopped onion 1 cup - sugar 1 tsp - salt 1 cup - vinegar 2 tbsp - dried parsley
Boil potatoes in jackets until done. Do not over cook. Cool and peel, slice into at least 1/4" slices. Cook bacon until crisp and drain all except 1/2 cup drippings. To the 1/2 cup drippings, add celery and onions, stirring constantly and cook until tender. Combine sugar, flour, salt, dry mustard and stir in vinegar and water. Cook until thick and pour over potatoes, parsley and grated carrots which have been placed in a 9" x 13" pan. Cover with foil and bake at 350° for 30 minutes, or if dish has been refrigerated, bake 45 minutes to 1 hour. Can be made ahead and the flavor is improved. Serves 15.

Recipe - Baked Potato Fans

4 med - baking potatoes 3 Tbsp - butter or margarine, melted 1/4 tsp - garlic salt 3 Tbsp - fresh chives or sliced green onions 1/4 c - shredded cheddar cheese (1 oz.) 2 Tbsp - grated Parmesan cheese
Scrub potatoes with a brush; pat dry. Cut potatoes crosswise into thin slices, but do not cut all the way through. Place potatoes in a shallow baking dish or pan. Gently press down to fan slightly. Bake at 350° for 25 to 30 minutes. Mix together next 3 ingredients and put on potatoes. Bake 50 minutes or till soft at 350°. Take out of oven and sprinkle cheeses on top and let melt. Serve.

Recipe - Barbecued Green Beans

1 qt - green beans, drained 4 strips - bacon 1 - onion, diced fine 1/2 cup - sugar 1/2 cup - ketchup 1/4 cup - vinegar
Dice bacon and brown. Drain off part of the fat and add onion, sugar, ketchup and vinegar. Add beans and simmer for 10-15 minutes before serving.

Recipe - Barbecued Green Beans

4 pieces - bacon 1 lg - onion, chopped 3/4 cup - ketchup 2 tbsp - mustard 1/2 cup - brown sugar salt to taste 1 1/2 qt - green beans, cooked
Fry bacon. Remove from pan and crumble. Saute onion in bacon grease. Add ketchup, mustard, brown sugar and salt. Heat. Put green beans in casserole. Pour sauce over beans. Bake at 350° for 1 1/2 hours.

Recipe - Barbequed Green Beans

10 - slices bacon 3/4 cup - kethup 3 tsp - worcestershire sauce 4 cups - green beans 1/4 cup - chopped onions 1/2 cup - brown sugar 3/4 tsp - salt
Fry bacon then break in pieces. In 2 tbsp bacon fat, saute chopped onions. Combine ketchup, brown sugar, worcestershire sauce and salt. Add onions and bacon pieces. Pour over green beans and mix lightly. Bake in a 1 qt covered casserole dish at 300° for 35-40 minutes or until heated through.

Recipe - Broccoli Casserole

2 pkg - broccoli, chopped 8 oz - philadelphia cream cheese 1 can - mushroom soup 1 1/2 cups - minute rice 1/2 cup - milk
Cook broccoli as directed. Drain. Mix soup, milk and cheese. Heat until cheese is melted, add to broccoli and rice. Bake 45 minutes at 350°.

Recipe - California Vegetable Deluxe

1-20 oz pkg - california vegetables 1/2 lb - velveeta cheese, cubed 1 tube - crushed town house or ritz crackers 1 stick - margarine, melted
Cook vegetables according to directions, drain liquid from vegetables and add cheese. Stir. Put vegetables and cheese in 2 qt casserole. Mix melted margarine with crushed crackers and put over top of vegetables. Heat at 350° for 15-20 minutes

Recipe - Campfire Veggie Packs

3 lg - potatoes, cut French fry style 1 lb - baby carrots 2 med - onions, chunks 1 stick - butter, cubed salt and pepper
Mix all the ingredients together and put in a foil hot pack and seal the end tightly. Place on a grill rack over the campfire for approximately 50 minutes or until soft. Turn over halfway through cooking. You may also add smoked sausage chunks or grilled chicken cubes to make a complete meal. Yield: 6-8 servings.

Recipe - Caramel Sweet Potatoes

3 medium - sweet potatoes, or 1 (29 oz.) can 1 t - salt 1 t - brown sugar 3 T - flour 2 T - butter 8 - marshmallows 1c - cream
Cook potatoes until tender. Cut in half length wise and arrange in greased baking dish. Mix salt, sugar and flour and pour over potatoes. Dot with butter. Add marshmallows. Pour cream over all and bake at 350° for 35 to 40 minutes.

Recipe - Cheddar Baked Potato Slices

1 can - cream of mushroom soup 1/2 tsp - paprika 1/4 tsp - pepper 4 med - baking potatoes (about 4 cups) 1 cup - cheese 1/2 cup - milk
In a small bowl combine soup, milk, paprika, and pepper. In greased 2 qt oblong baking dish, arrange potatoes cut into 1/4 in slices in overlapping rows. Sprinkle with cheese; spoon soup mixture over cheese, cover with foil. Bake at 400° for 45 minutes. Uncover, bake 10 minutes longer until potatoes are fork tender. Serves 6 people.

2 lbs - frozen hash browns, thawed 1 can - cream of chicken soup 2 cups - cheddar cheese, grated 1/2 cup - butter, melted 1 pt - sour cream 1/2 cup - onions 2 cups - corn flakes 3 tbsp - melted butter
Mix first 6 ingredients together well. Place in greased 9x13 pan. Mix cornflakes and butter. Sprinkle on top of potatoes. Bake at 350° for 45 minutes to 1 hour uncovered. Makes 8-10 servings.

1 can - cream of chicken soup 1 can - evaporated milk 1 c - sour cream 1/4 c - butter, melted 1 tsp - garlic powder 1 tsp - onion powder 32 oz - tater tots 1 1/2 c - shredded cheese 1 c - crushed potato chips
In bowl combine first 6 ingredients. Gently stir in tater tots, pour into a greased 9"x13" pan. Sprinkle with cheese and potato chips. Bake uncovered at 350° for 30 to 35 minutes. (I like to sprinkle parsley over the top.) The children love these potatoes.

Recipe - Cheese Sauce for Broccoli

2 tbsp - butter 1 cup - milk 1/2 tsp - salt 4 slices - velveeta cheese 1/2 cup - milk 3 tbsp - flour
Heat 1 cup milk, butter and salt. Make thickening with 1/2 cup milk and flour, add to first mixture. Boil till smooth. Turn off heat and add cheese. Stir till smooth.

Recipe - Chocolate Carrot Cake

2 c - all-purpose flour 2 c - sugar 1/2 c - baking cocoa, scant 1 tsp - soda 1/2 tsp - salt 4 - eggs 1 1/4 c - vegetable oil 3 c - finely shredded carrots Frosting: 8 oz - cream cheese 1/2 c - butter 3 3/4 c - powered sugar 1/4 c - baking cocoa 3 tsp - vanilla 1/4 c - chopped nuts, optional 1/4 c - chocolate chips, optional
In a large bowl, combine first five ingredients. Add the eggs, oil and carrots. Mix well. Bake in two greased 9" round pans at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan. Frosting: Beat cream cheese and butter until fluffy. Add powered sugar, cocoa and vanilla. Spread between layers and on top. Sprinkle with nuts and chocolate chips if desired.

10 - cherry tomatoes, halved 2 - celery ribs, thinly sliced 1 - medium green pepper, sliced 1 - medium sweet red pepper, sliced 1 c - sliced fresh mushrooms 1 Tbsp - cider vinegar 1 Tbsp - oil 1 tsp - lemon juice 1 - garlic clove, minced 1 tsp - dried basil 1/2 tsp - salt 1/2 tsp - pepper Divide the vegetables between 2 pieces of heavy-duty foil (about 18" x 18"). In a small bowl, combine the remaining ingredients; drizzle over vegetables. Fold foil around vegetables and seal tightly. Grill, covered, over medium heat for 10-15 minutes or until the vegetables are crisp-tender. Yield: 6 servings.

In a large bowl combine the first 9 ingredients. Transfer to a greased 9" x 13" baking dish. Toss cracker crumbs and butter, then sprinkle on top of vegetable mixture. Bake uncovered at 350° for 40-45 minutes until bubbly. Serves 12.

Recipe - Creamed Potatoes & Peas

3 cups - fresh peas 12 sm - new potatoes 1 1/2 tsp - salt 1 cup - water 3 tbsp - margarine 1 cup - cream or half and half 1 tbsp - flour
Cook the peas and potatoes in salt water until soft. Add margarine. Mix cream and flour. Add to vegetables. Cook until thickened.
