Recipe - After Thanksgiving Hot Dish
Our Price:
4 cups - chicken broth
2 cups - long-cooking brown rice, uncooked
2 tbsp - butter
1 - onion, chopped
1 - green pepper, chopped
3 to 4 cups - cooked turkey, cubed
2 cups - mixed vegetables, cooked
10 3/4 oz can - cream of celery soup
salt and pepper to taste
Bring broth to a boil in a stockpot over medium heat; stir in rice. Reduce heat to low; cover and simmer for 45 minutes, or as directed on package. When rice has 15 yet to cook, melt butter in a skillet over medium heat. Add onion and green pepper; saute until softened. Add turkey to skillet and heat through. When rice is done, add turkey mixture, vegetables and soup to rice. Simmer for 5 minutes, or until heated through. Add salt and pepper to taste. Serves 6-8 This is another good recipe to use up your leftover turkey and veggies. If you dont have enough leftover veggies, add a can of mixed vegetables.

Recipe - Amish Runion Wraps
Our Price:
runion coating or chicken coating mix
chicken breasts or strips/tenders
oil for frying
flour tortillas or your favorite wraps
sour cream or dressing of choice (Hartville poppyseed and ranch dressing, excellent choices)
tomatoes, thinly sliced and cut in half
onions, red or candy, optional
cheddar or your favorite cheese, shredded
lettuce, romaine, spring mix, iceberg or your choice - chopped
peppers, red, yellow and orange - thinly sliced
chow mein noodles
Coat chicken in runions coating mix, fry in oil until tender. If using a whole breast cut into strips, (I like the whole breast, the chicken tends to stay moister). Lay tortillas on plate, spread with sour cream or dressing of choice. Add lettuce, tomatoes, chicken strips, onions, cheese, peppers and noodles. The noodles add a nice crunch to the wrap. More dressing can be added to make a "glue" to hold together. Wrap tortillas up, place a toothpick to hold in place and serve. My family really enjoy the easy to do wraps, and are very portable. This also makes a wonderful salad, if you want to omit the tortilla wrap.

Recipe - Applesauce Sandwiches

1 c - applesauce
8 slices - bread
1/4 c - margarine
1 Tbsp - sugar
1/4 tsp - cinnamon
Spread applesauce on four slices of bread; top with the remaining bread. Toast on griddle in margarine for 3-4 minutes on each side or until golden brown. Combine sugar and cinnamon. Sprinkle over hot sandwiches. These are great for kids for breakfast.

Recipe - Asparasgus Cheese Strata
Our Price:
1 1/2 lb - fresh asparagus, cut in 2" pieces
3 T - butter, melted
1 loaf - (1lb.) sliced bread
3/4 c - shredded Cheddar cheese, divided
2 c - cubed fully cooked ham
6 - eggs
3 c - milk
2 t - minced onion
1/2 t - salt
1/4 t - dry mustard
In a saucepan, cover asparagus with water; cover and cook until just tender but still firm. Drain ans set aside. Lightly brush butter over one dish of bread slices. Place half of the bread, buttered side up, in a greased 13" x 9" x 2" baking dish. Sprinkle with 1/2 c. cheese. Layer with asparagus and ham. Cover with remaining bread, buttered side up. In a bowl, beat eggs; add milk, onion, salt and mustard; pour over bread. Cover and refrigerate overnight. Bake uncovered at 325° for 50 minutes. Sprinkle with remaining cheese. Return to the oven for 10 minutes or until cheese is melted, and a knife inserted near the center comes out clean.

Recipe - Asparasgus Ham Quiche

20 oz - frozen cut asparagus, thawed
1 lb - fully cooked ham, chopped
2 c - shredded Swiss cheese
1/2 c - chopped onions
6 - eggs
2 c - milk
1 12/ c - Bisquick
2 Tbsp - dried vegetable flakes
1/4 tsp - pepper
In two greased 9" pie plates, layer asparagus, ham, cheese, and onion. Beat eggs, add remaining ingredients and mix well. Divide in half and pour over asparagus mixture in each pie plate. Bake at 375° for 30 minutes or until a knife inserted near the center comes out clean. Serves 12.

Recipe - Bacon Cheeseburger Casserole

2lb - hamburger
chopped onion
1lb - bacon
2 cans - cream of celery soup
2 tsp - worcestershire sauce
1/2 soup can - milk
seasonings to taste
2lb - hashbrowns, thawed
velveeta cheese
Brown hamburger; add onion. Brown bacon. Add crumbled bacon to hamburger. Mix soup, milk and seasonings; pour over meat. Top with hashbrowns and velveeta cheese. Cover and bake at 350° until heated through.

Recipe - Baked Asparagus
Our Price:
5 T - butter
5 T - flour
3/4 c - milk
3/4 c - asparagus cooking water or canned juice
3/4 c - mayonnaise
salt to taste
pepper to taste
6 c - asparagus, cut in 1" lengths
5 - hard-boiled eggs, sliced
3/4 c - almonds, optional
1 c - cheese
3/4 c - cracker crumbs
Cook asparagus until slightly tender. Reserve cooking water; melt butter. Blend in flour. Add milk and cooking water; cook until thick. Add mayonnaise, salt and pepper. In 2 qt. baking dish, arrange a layer of asparagus, eggs, almonds and cheese. Cover with half the sauce; repeat. Top with cracker crumbs. (Buttered Ritz crackers are delicious, but Saltines work, too). Bake at 325° for 30 minutes.

Recipe - Baked Spagetti

1 cup - onion (shopped)
1 cup - green pepper (chopped)
1 tbsp - butter
1 (28 oz) can - tomatoes (diced with liquid)
1 (4 oz) can - mushrooms (drained)
1 (2 1/2 oz) can - sliced black olives (optional)
2 tsp - dried oregano
1 tbsp - ground beef (browned and drained)
12 oz - spaghetti (cooked and drained)
2 cups - shredded cheddar cheese
1 (10 3/4 oz) can - cream of chicken soup
1/4 cup - water
1/4 cup - grated parmesan cheese
Saute onions and peppers until tender. Add diced tomatoes, mushrooms, olives and oregano. Add beef and simmer for 10 minutes. Place half of spaghetti in a 9x13 pan. Top with half of tomato mixture and sprinkle with 1 cup cheddar cheese. Repeat layers. Mix soup and water until smooth. Spread on top. Sprinkle with parmesean cheese. Bake uncovered at 350° for 30 to 35 minutes.

Recipe - BBQ Meatballs

3 lb - ground beef
1 (15 oz) can - evaporated milk
2 cups - oatmeal
1 tsp - black pepper
2 tsp - chili powder
2-3 tsp - salt
1/2 tsp - garlic powder
2 - eggs
1/2 cup - chopped onion
Sauce:
2 cups - ketchup
2 cups - brown sugar
1/2 cup - onion
1 tsp - liquid smoke
1/2 tsp - garlic powder
a little water
Mix meatballs and put on cookie sheet and roast for 30 minutes. Then put in roaster. Mix sauce ingredients and put between layers. Bake at 350° for 1 hour.

Recipe - Beef Chimichangas

1 lb - ground beef
1/2 cup - finely chopped onion
1 can (16 oz) - refried beans
3 cans (8 oz) - tomato sauce, divided
2 tsp - chili powder
2 - garlic cloves, minced
vegetable oil for frying
1/2 tsp - ground cumin
12 - flour tortillas (10")
melted butter or margarine
1 can (4 oz) - chopped green chilis
1 can (4 oz) - chopped jalapeno peppers
1 1/2 cups - shredded cheddar cheese
In a skillet brown the beef; drain. Stir in onion, beans, 1/2 cup tomato sauce, chili powder, garlic and cumin. Brush one side of the tortilla with melted butter. Spoon about 1/3 cup of beef mixture off-center on the unbuttered side of tortillas. Fold edge nearest filling up and over to cover. Fold in both sides and roll up. Fasten with toothpicks; place in a freezer container. For sauce: combine chilis, peppers and remaining tomato sauce in a saucepan; heat through. Cool and transfer to a freezer container. Sauce and chimichangas may be frozen up to 3 months. To prepare, thaw sauce and chimichangas in the refrigerator. In an electric skillet or deep fat fryer, heat 1" of oil to 375°. Fry the chimichangas for 1 1/2 to 2 minutes on each side or until browned. Drain on paper towels. Warm the sauce; serve over chimichangas. Top with cheese. Yield 12 chimichangas. Chimichangas may be baked instead of fried. Brush with melted butter and bake at 350° for 25-30 minutes or until golden brown. (If frozen, thaw before baking).

Recipe - Beef Macaroni Skillet

Recipe - Beef Taco Bake

1 can - cream of tomato soup
1 cup - salsa
1/2 cup - milk
6 flour or 8 corn tortillas, cut into 1" pieces
1 cup - shredded cheddar cheese
Brown meat, pour off fat. Add soup, salsa, milk, tortillas and half of cheese. Bake in a shallow dish at 400° for 30 minutes. Sprinkle with cheese.

Recipe - Bubble-Up Pizza

2 cans - biscuits, quartered
1 lb - hamburger or sausage
1 qt - pizza sauce
1 med - onion, chopped
green peppers, chopped
pepperoni
mushrooms
mozzarella cheese
Brown hamburger with onion. Add rest of ingredients. Bake at 350° for 30-40 minutes or until done; spread mozzarella cheese on top and return to oven to melt cheese.

Recipe - Buffalo Chicken Grilled Cheese

2 c - shredded chicken, cooked
1/4-1/2 c - Franks hot sauce
12 - slices American cheese
12 - slices bread
butter
Mix together hot sauce and chicken. Spread 6 sides of bread with butter and put slices on griddle, butter side down. Top with 2 pieces of cheese and chicken mixture. Put remaining slices on top, butter side up and brown both sides.

Recipe - Burrito Casserole
Our Price:
1 lb - hamburger
1 sm - onion
1 pkg - taco seasoning
1 can - refried beans
1 can - nacho cheese soup
2 cans - cream of chicken soup
1 tsp - cumin
1 tsp - oregano
10 - soft tortillas
Brown hamburger with onions. Add taco seasoning and refried beans. Mix soups with 1 cup water and heat. Add cumin and oregano. Divide soup mixture in half. Mix 1/2 of it with hamburger. Put small amount of the other half of soup mixture in bottom of 9" x 13" pan; about 2 tbsp. Top with a single layer tortillas. (tortillas may be cut in half.) Layer 1/2 of hamburger mixture on top. Then another layer of burritos. Top with the rest of the hamburger mixture and another layer of burritos. Top with the rest of the soup mixture. Bake at 350° for 1 hour.

Recipe - Burritos
Our Price:
1 1/2 lb - hamburger
1 sm - onion
1 can - cream of chicken soup
8 oz - sour cream
1 pkg - taco seasoning
1 1/2 cups - ortega salsa (medium heat)
2 cups - mild cheddar cheese
10 - 10in tortillas
Fry hamburger and onion together, drain and return to pan.
Add:
1/2 can - of soup
1 1/2 tsp - taco seasoning
1 cup - cheddar cheese (grated)
1/2 - salsa
Stir ingredients together. Then place 1/3 cup of mixture on each of the 10 tortillas. Roll ends and sides toward the center of tortilla, then roll into burrito shape. Place seam side down in greased 9x13 glass pan.
In a small bowl combine:
1/2 can - soup
1 tbsp - sour cream (heaping)
1 1/2 tsp - taco seasoning
1 cup - salsa
Stir to combine, and then pour mixture over burritos. Bake at 350° for 30 minutes, remove and add shredded cheese on top. Return to oven till cheese is melted and bubbly. If desired, garnish with shredded lettuce, sour cream, black olives, etc.

Recipe - Carrot Casserole

4 c - carrots, sliced
1 large - onion, sliced
1 (8oz.) can - cream of celery soup
1/2 tsp - pepper
1 1/2 c - grated Cheddar cheese
1/2 tsp - salt
3 Tbsp - butter
3 c - bread cubes
1/3 c - butter
Cook carrots in water and drain. Saute sliced onion in 3 Tbsp. butter. Add to carrots. Mix soup, pepper, cheese and salt. Mix soup mixture to carrots to carrots and cook in 2 qt. casserole dish. Melt 1/3 c . butter and pour over bread cubes. Sprinkle over carrot mixture. Bake at 350° for 20 minutes.

Recipe - Carrot Salad

3 (3 oz.) boxes - orange Jell-O
3 c - boiling water
2 c - ice
3 - carrots
1 (20 oz.) can - crushed pineapple
1 stem - celery
1 c - chopped peanuts
Dissolve Jell-O in boiling water. Add the ice and chill until partly jelled. Finely grate the carrots, dice the celery and add to Jell-O. Add the pineapple, including the juice, and mix well. Pour into a 9"x13" serving dish and refrigerate. Add chopped nuts on top when you are ready to serve. Yield: 15 servings.

Recipe - Carrot Saute

3 c - carrots, julienned
1 Tbsp - vegetable oil
1/2 c - green onions, sliced
1 Tbsp - lemon juice
3/4 tsp - Italian seasoning
1/2 tsp - garlic salt
dash of pepper
In a skillet, saute carrots in oil for 3 minutes. Add onions; cook 3-4 minutes longer or until crisp, tender. Stir in lemon juice, Italian seasoning, garlic salt and pepepr. Serves 4.

Recipe - Chalupas

1 lb - ground beef
1 cup - chopped onion, divided
2 tbsp - melted butter
2 tbsp - flour
3 tbsp - chili powder
1 1/2 cups - tomato soup
1 1/2 cups - light cream
salt to taste
12 - tortillas, cut in strips
1 1/2 cups - grated american cheese
Saute ground beef with 1/2 cup onion in butter in skillet until crumbly. Stir in flour and chili powder. Cook for 5 minutes. Add 1 cup water; blend well. Simmer covered until thick. Combine soup, cream, salt and remaining onion in bowl; blend well. Alternate layers of tortilla strips, ground beef mixture, soup mixture and cheese in greased casserole until all ingredients are used. Bake at 325° until browned and bubbly. Yield: 6 servings.

Recipe - Cheeseburger Pizza

ground beef, fried with onions
bacon, fried
Cheddar cheese or muenster cheese
Place ingredients on homemade pizza dough crust in listed order starting with pizza sauce and topping with cheese. Put oven rack in lowest position. Heat oven to 500° and bake for 8-10 minutes or until crust is brown and cheese is melted.

Recipe - Cheesy Chicken Enchiladas

1/2 cup - chopped onion
1 - garlic clove, chopped
1 tbsp - oil
2 cups - cubed, cooked chicken
1 (4oz) can - green chiles
1/4 cup - chicken broth
2 tsp - chili powder
1 tsp - ground cumin
4 oz - cream cheese
6 (6") - flour tortillas
1/4 lb - velveeta cheese
2 tbsp - milk
1/2 cup - chopped tomatoes
Saute onion and garlic in oil. Stir in chicken, chilies, broth and seasonings. Add cream cheese; stir until melted. Put 1/3 cup of filling in each tortilla. Melt cheese and milk together; add tomatoes. Pour over rolled-up tortillas. Bake for 20-30 minutes.

Recipe - Cheesy Enchiladas

Cheese Sauce:
1 stick - oleo
4 tbsp - flour
3 cups - milk
8 oz - velveeta cheese
8 oz - sour cream
1 can - nacho cheese soup
Meat Mixture:
2 lbs - hamburger, browned
1 med - onion
2 tbsp - flour
1 tsp - salt
1 cup - pizza sauce
1/2 tsp - oregano
10 - 12 - flour tortillas
2 cups - grated cheese
Place meat mixture in tortillas. Roll up and place in casserole. Pour cheese sauce over top. Bake at 350° until cheese starts to bubble and turn brown. Top with lettuce and tomatoes.

Recipe - Cheesy Ham Casserole
Our Price:
3 cups - med onions, diced
1/2 cup - frozen peas
1 baked - ham, sliced thick and cut into cubes
1-12 oz pkg - curly noodles
1/4 cup - diced red pepper
1/4 cup - diced green pepper
1-3 oz jar - sliced mushrooms
1 tbsp - oil or butter
Cheese sauce:
1 tbsp - butter
1 tbsp - flour
1 cup - milk
3/4 cup - shredded provolone or swiss cheese
Prepare noodles according to pkg directions. Drain and pour int a 9" x 13" baking dish. In skillet saute mushrooms, pepper and onions in oil or butter until soft, but not browned. Remove from heat. Rinse peas under hot water until slightly thawed. Add sauteed vegetables, peas and ham cubes to noodles. To prepare sauce, melt butter in skillet, stir in flour until well blended, slowly add milk and cook, stirring until thickened. Add shredded cheese and stir until cheese melts. Season with salt and pepper. Add sauce to ingredients in baking dish and mix to combine. Bake at 350° for 20-25 minutes.
