Sweet Potato Casserole
8 Small/ Medium Sweet Potatoes, peeled, cooked, & mashed (or 4 really large)
⅓ Cup Sugar
2 Eggs, beaten
1 tsp Vanilla
⅓ Cup Butter, softened or melted
Pinch of Salt
1 Cup Brown Sugar
⅓ Cup Flour
⅓ Cup Cold Butter
1 Cup Chopped Walnuts
Preheat oven to 350 degrees
Combine & beat together sweet potatoes, sugar, eggs, vanilla, butter and salt.
Pour into greased 1-1/2 or 2 quart casserole dish.
Combine brown sugar and flour.
Cut in cold butter.
Stir in nuts; spoon onto sweet potato mixture.
Bake at 350 degrees for 1 hour or until top is bubbly.
