Ingredients
Cookie

1 c. Butter Crisco (or Margarine) All butter will make flatter cookies

3 c. Brown Sugar, loose packed

4 Eggs

1 tsp. Salt

1-1/2 tsp. Baking Soda

2 tsp. Cinnamon
-
¼ tsp. Nutmeg (optional)

2 tsp. Vanilla
-
2-1/2 c. Flour
-
3 c. Oatmeal (Quick Oats)
Filling*
- 3 egg whites beaten stiff
-
3 tsp. Vanilla
-
6 Tbsp. Milk
-
1-1/2 c. White Shortening
-
4 to 4-1/2 c. Powdered Sugar, Sifted
Directions
Cookies
Preheat oven to 350 degrees
Combine dry ingredients (except oatmeal) in a separate bowl and set aside.
Cream together shortening and brown sugar. Add eggs one at a time, beating well after each egg is added.
Gradually add dry ingredients. Add oatmeal last. Mix well
Drop on cookie sheets. Allow for space to spread, if you want circular cookies.
Filling
Cream together shortening, powdered sugar, vanilla and milk and set aside.
Beat egg whites until stiff. Add beaten egg whites to shortening mixture and cream well.
Spread filling in between two cooled cookies. Enjoy!
