3 c. Cooked shredded chicken

1 1/2 c. Cottage cheese (blended)

4 Eggs

1 1/4 c. Shredded Mozzarella

1/3 c. Grated Parmesan

1/2 c. Sun-dried tomatoes diced; if in oil, pat dry (+ 1/2 c. for top)

1 tsp. Italian seasoning (or oregano)

1/2 tsp. Salt

1/2 tsp. Pepper

Optional: Fresh basil ribbons on top
Directions
Preheat oven to 375 degrees. Grease a 9x13” pan.
Combine mozzarella and parmesan cheese and set aside.
Whisk cottage cheese, eggs, seasoning, salt, and pepper.
Fold in chicken, 3/4 of cheese, and sun-dried tomatoes.
Place in greased pan. Top with remaining cheese and 1/2 c. diced sun-dried tomatoes.
Bake 28-35 minutes. Let rest 10 minutes before serving. Top with fresh basil ribbons if using.
