Cowboy Beef & Potato Bake

Ingredients

  • 2 lbs Ground Beef

  • 1 large Onion, diced

  • 1 tsp Garlic Powder

  • 1 tsp Black Pepper

  • 1 tsp Salt

  • 1 - 10.5oz can Cream of Mushroom Soup

  • 1 c Sour Cream

  • 1 Ranch Seasoning Mix Packet

  • 2 c Shredded Cheddar Cheese, divided

  • 1 bag (30-32oz) Frozen diced Hash Brown Potatoes, thawed

  • 2 Green Onion, sliced

  • 1 can Corn, drained

  • 1 can Ranch-Style Beans

  • 8 oz Mushrooms, sauteed

  • 1 c Frozen Mixed Vegetables

Directions

  1. Preheat oven to 350. Grease a 9x13 baking dish

  2. Brown ground beef and onion together with garlic powder, black pepper, and salt. Drain excess grease

  3. In a large bowl, mix cream of mushroom soup, sour cream, ranch seasoning, and 1 ½ c cheddar cheese.

  4. Stir in hash browns and cooked beef mixture

  5. Spread into greased baking dish. Top with remaining cheese and bacon

  6. Bake uncovered for 45-50 minutes, until bubbly and golden

  7. Sprinkle with green onions before serving
