A creamy, cheesy corn casserole loaded with smoky bacon, fire-roasted green chiles, and cheddar cheese 🌽 A delicious way to enjoy fresh corn season and an easy side dish for cookouts, potlucks, and family dinners ✨

Ingredients
4oz WC Cream Cheese, softened
¾ c Whole Milk
¼ c All-purpose Flour
2 cloves Garlic, minced
1 tsp Paprika
¼ tsp Salt
¼ tsp Ground Black Pepper
6-8 med. ears Fresh corn, or 2 (15oz.) cans corn, drained, or 2 (10oz.) pks. Frozen whole kernel corn
10 slices WC Bacon, cooked and crumbled
2 (4oz.) cans Fire-roasted green chiles
3 Green onions chopped, green and white parts separated
2 c. Shredded Cheddar cheese, divided
Fresh jalapeno slices for garnish (optional)
Directions
Preheat the oven to 350 degrees
Whisk together cream cheese, milk, flour, garlic, paprika, salt and pepper in a large bowl until well combined
Stir in corn, bacon, green chiles, white parts of chopped green onion, and 1 1/2 c. of the cheese.
Transfer to a 2 quart baking dish
Sprinkle with remaining
Bake until cheese is melted and edges are golden brown, 40-45 minutes
Let stand for 5 minutes before serving.
Garnish with chopped chives
