Ingredients

6 Strips Bacon

2 lbs Baking Potatoes, peeled & chopped

1 (5oz) can Evaporated Milk or Whole Milk

2 tbs Butter
-
1 ½ tsp salt

½ tsp Ground Black Pepper

1 lb Ground Beef
-
1 cup Onion, chopped
-
1 Green Bell Pepper, chopped

1 cup Whole Corn Kernels, frozen

2 Garlic Cloves, minced

1 ½ tsp Smoked Paprika

¼ cup WCF BBQ Sauce
-
1 tb Worcestershire Sauce
-
1 tsp Dijon Mustard
-
½ cup Cheddar or Pepper Jack Cheese, shredded

¼ cup Fried Onions
-
2 tbs Fresh Parsley, finely chopped
Directions
Preheat oven to 375 degrees. Grease a 2-quart baking dish with cooking spray & place on a baking sheet.
Cook bacon in a large skillet over medium heat, turning occasionally, until crisp, about 10 minutes. Place bacon on a paper towel to drain grease. Drain all but 1 TB of bacon grease in the skillet.
Chop bacon once cooled to touch.
In a large pot bring water to a boil. Add potatoes and return to a boil. Cook, covered, until potatoes are fork tender 15 to 20 minutes. Drain potatoes.
Return potatoes to pot along with evaporated milk (or whole milk), butter, ½ tsp salt, and ½ tsp pepper.
Mash potatoes with a potato masher until smooth.
Stir ¼ cup chopped bacon into mashed potatoes.
To the pan with the bacon grease add ground beef, onion, and bell pepper. Cook over medium heat until the meat is browned and cooked through, stirring occasionally, 8 to 10 minutes.
Add corn kernels, garlic, and paprika to the skillet. Cook and stir for 1 minute.
Stir in BBQ sauce, Worcestershire sauce, mustard, remaining 1 tsp salt, and ½ tsp pepper.
Spread ground beef mixture in prepared baking dish.
Spread potatoes evenly over beef. Sprinkle with shredded cheese, remaining bacon, and fried onions.
Bake until meat mixture is bubbly and cheese is melted, 20 to 25 minutes. Garnish with parsley before serving.
