Lee Ann's Crunchy Romaine Strawberry Salad

Ingredients

    • 1 package Ramen Noodles, crushed
    • 1 cup roasted & salted pecan halves
    • 3 Tbsp butter
    • 1 large head romaine lettuce, chopped
    • 1 crown broccoli, chopped
    • 4 green onions, chopped
    • 1 cup strawberries, thickly sliced

    • ½ c red wine vinegar
    • ¾ cup sugar
    • ½ cup vegetable oil
    • 1 Tbsp soy sauce
    • ¾ tsp salt
    • ¼ tsp pepper

    Directions

    1. In a medium saucepan, on medium heat combine crushed noodles (discard seasoning packet) & pecan halves. Sautee until it starts to turn golden, be careful not to over-toast! Set aside to cool

    2. Chop vegetables & strawberries. Combine in large bowl

    3. Dressing: heat red wine vinegar & sugar together and stir until the sugar is dissolved. Allow to cool completely

    4. Once cooled add in remaining dressing ingredients

    5. Toss noodles & nut mixture with the vegetables & strawberries. Top salad with dressing & serve immediately! Enjoy!
