Spinach Cashew Salad with Hot Bacon Dressing

Ingredients

  • 10 oz Container Spinach

  • ½ Medium Red Onion, sliced thin-medium

  • 4-5 Hard Boiled Eggs, coarsely chopped

  • 1 Cup Roasted & Salted Cashews, coarsely chopped

  • ¼ Cup Roasted & Salted Pistachios

  • 1 Cup Swiss Cheese, cubed small

  • 8 Slices Bacon, cut into small pieces & fried

  • ⅓ Cup Bacon Drippings

  • ½ Cup Shallots, diced

  • ½ Cup Sugar OR ½ Cup Maple Syrup

  • ½ Cup Apple Cider Vinegar

  • 1 Tbsp Corn Starch

  • 1 tsp Kosher Salt

  • ¼ tsp Fresh Ground Pepper

Directions

  1. Cut up & fry bacon. Remove bacon from drippings and then measure drippings & return 1/3 cup to skillet.

  2. Add shallots to skillet and heat until soft.

  3. Add sugar or maple syrup to onions and heat until sugar is dissolved.

  4. Combine & whisk together apple cider vinegar and cornstarch and add to skillet whisking while adding on medium heat. Add salt & pepper.

  5. Sprinkle bacon, sliced onions, chopped eggs, cubed Swiss & all the nuts onto chopped spinach.

  6. Drizzle dressing on each plate of salad or over the entire salad right before serving.
