Ingredients

3 Eggs

1 ½ c Sugar

½ c Brown Sugar

1 c Vegetable Oil

2 tsp Vanilla
-
1 can (17oz) Fruit Cocktail, drained

2 c Shredded Zucchini

3 c All Purpose Flour
-
2 tsp Baking Soda
-
1 ½ tsp Cinnamon

1 tsp Salt
-
¾ tsp Nutmeg

1 c Walnuts, chopped - optional
Directions
Preheat oven to 350 degrees
In a large mixing bowl, beat eggs. Add sugar, oil, and vanilla. Beat well.
Stir in zucchini and fruit cocktail.
Combine dry ingredients in a bowl.
Stir into zucchini mixture. Add nuts if using.
Pour into two, 8” loaf pans or four, 7 3/8 x 3 7/8 x 2 1/4 loaf pans, sprayed with baking spray
Bake at 350 for 60-70 minutes. Both size pans bake for an hour or so.
Check little pans at 40 minutes then keep checking for the last 20 minutes.
*Cover bread with aluminum foil halfway through baking to keep edges from getting too brown. Just lay the piece over the top of the bread.
